This page in the Windows Embedded Developer Center has a nice collection of resources (Microsoft and 3rd party) for learning about Microsoft's embedded products and tools - pretty valuable IMHO since usually it is rather difficult to find out what training material is available to get up to speed with a certain product. Among these is the preparation kit for the new MCTS exam 70-571 "Microsoft Windows Embedded CE 6.0 Development", btw., which can be obtained for free, and is currently in the process of being localized to other languages. (I'm reviewing the German version right now.)
